A variety of delightful breakfasts are offered here at the Minnie Street Bed & Breakfast INN that are consistently pleasing and served at our breakfast table each morning at two seatings, one at 7:15 and one at 8:15 a.m. 

An example might be our Amaretto Croissants that are smothered with warm syrup and topped with crushed almonds, tasty sausage links on the side, and garnished with fresh fruit. Other mornings might be more traditional with a scrumptious egg dish, potato patties, sausage, homemade blueberry muffins, and of course fresh fruit which is served every morning along with fresh brewed coffee, teas, and juices. For those with early departures, or for those who simply want to sleep in late, we provide a delicious healthy "Breakfast to Go". Either way, we're sure you'll leave satisfied.


One thought to consider...We prepare one breakfast for all our guests each morning. We are not a restaurant nor a short order line. We are happy to accommodate special needs when this has been communicated prior to arrival or the evening before, but PLEASE ...not during breakfast!

Recipes

Apple Pancakes- Marnie's Recipe
(This one I am telling you by memory)
2 cups any pancake mix

2 granny smith apples chopped
1/2 cup of brown sugar
1 stick real butter
1 tsp cinnamon
1/2 tsp nutmeg
1 cup walnuts, chopped

Melt butter in pan, add ingredients (except walnuts). Simmer on low for about 10 minutes with lid on pan. Add walnuts for 5 more minutes. Add to the pancake mix and stir until mixed completely.
Cook on medium heat and serve with warm syrup.

OR... make the pancakes as is and serve the hot apple mixture on top!!

 

 

       Yum!!

Breakfast Pie
Topping:
8 slices bacon or 1 stick butter, melted
4-6 cups corn flakes, crushed

12 eggs
5 cups frozen hash brown potatoes
3 cups shredded swiss cheese
2 cups cottage cheese
2/3 cup milk
6 green onions, thinly sliced or 1 can diced chilies
2 tsp. salt
1/4 tsp. pepper
8 drops of hot pepper sauce

  1. Fry bacon until crisp, drain but save 2 Tbs. Crumble the bacon and set aside. Mix cornflakes crumbs with the warm bacon grease and set aside.
  2. In medium size bowl, beat eggs until foamy. Stir in potatoes, cheese, milk, onion, salt, pepper, and hot pepper sauce. Pour into greased 9 by 13 inch pan and sprinkle with the cornflake mixture. Cover and refrigerate overnight.
  3. Bake uncovered at 350 for about one hour or until knife comes out clean.

(pronounced: blu - barba - straba - raba - jama), 

the best homemade jam and syrup in the WORLD!! 

 

Well, that's what most of our world travelers say anyway!

Ham & Cheese Quiche
1 cup ham, diced
3/4 cup swiss cheese, shredded
5 bacon strips, cooked and crumbled
3/4 cup cheddar cheese shredded
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1 cup milk
2 eggs
1/4 cup flour
1/4 tsp salt
1/8 tsp pepper

Mix ham, cheese, bacon, onion, and green pepper and place in a greased 10 inch quiche dish or pie plate. Put milk, flour, eggs, salt, and pepper in a blender: blend for 40 seconds and pour over ingredients in quiche dish. Bake, uncovered , at 350 F for 45-60 minutes, or until set and lightly browned. Let stand 5 minutes before serving. serves 4-6

Note: sausage, browned and drained, may be substituted for the ham. Mushrooms and/or mild green chilies may be substituted for the green peppers.

Baked Oatmeal
1 c. oil, canola or olive
2/3 c. brown sugar
2/3 c. white sugar
4 large eggs, beaten

1/2 c. plain low fat yogurt
6 c. rolled oats, medium or thick
2 t. vanilla (or 2 t. cinnamon)
1 T. baking powder
1 t. salt

Mix oil, sugars, yogurt and eggs until well mixed. Add oats, cinnamon or vanilla, baking powder and salt. Stir until thoroughly mixed.

Baking options:

1) Spoon into greased 13 x 9 inch pan and bake at 350  degrees for 30 minutes until browned. 9-10 servings. Cut into serving size squares.

2) Spoon evenly (about 1/2 c.) into greased large muffin tin cups and bake at 350 degrees for 20 minutes until browned. Will make about 10 "muffins". These are very easy to serve and great to freeze.

Serve with hot milk, raisins or craisins, and chopped nuts.

Scrambled Egg Enchiladas
1 tbsp butter
12 large eggs, lightly beaten
1 1/2 cups cheddar cheese
1 1/2 cups chopped ham

1 small onion, chopped and lightly cooked
12 flour tortillas

Melt butter in large skillet over medium heat: add eggs. Cook, without stirring, until eggs begin to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue cooking until eggs are thickened, but still moist. Remove from heat. Add cheese and ham to eggs and stir until well mixed. Spoon mixture onto tortillas and roll up. Place in a lightly greased pan. Bake at 350 for 35-40 minutes, or until thoroughly heated.
Pour nacho cheese or an easy melting cheese (Velveeta) over the enchiladas and serve with salsa and sour cream. Makes 12 servings.
